Heart Healthy Recipe: Berry Muffins

Makes: 12 muffins

Ingredients:

  • 1 2/3 cups rolled oats
  • 3 ripe bananas
  • 1/4 cup olive oil
  • 1/4 cup maple syrup
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/3 cup flaxseed ground
  • 2 tbsp rolled oats (for topping)
  • 1 cup frozen berries

Method:
Preheat oven to 180 degrees Celsius. In a food processor or blender, blend oats into a fine flour and place into a bowl. Put the banana, oil, maple syrup, vanilla and eggs into the processor and blend until just smooth.

Add the wet mix to the oat flour and add remaining ingredients except for the berries. Mix until smooth. Add the berries and mix until combined. Spoon mixture into a muffin tray and top with extra oats and berries if desired.

Bake for approx. 20 minutes or until done.
