Nectarine and berry salad
For the salad
4 nectarines, sliced and stones removed
250 g strawberries, washed and hulled
¼ cup fresh mint, washed and
For the dressing
250 ml fresh orange juice
½ teaspoon vanilla essence
1 tablespoon caster sugar
Toss the fruit and mint together.
Combine the dressing ingredients in a small saucepan and stir over a low heat until the sugar has dissolved.
Increase the temperature and simmer for five minutes.
Remove from the heat and cool. Pour dressing over fruit and chill.
Use canned peaches if nectarines are not in season.
Serve with reduced-fat vanilla ice cream or yoghurt.
