King prawn salad with ginger dressing
Serves 4
Ingredients
1 punnet ripe cherry tomatoes
1 cucumber
Half bunch fresh coriander
1 kg green prawns
Method
- In a large mixing bowl, place halved cherry tomatoes, finely sliced cucumber and chopped coriander leaves.
- Peel and de-vein green prawns, leaving tails on.
- Cook quickly on BBQ grill.
- Transfer prawns to salad bowl.
- Add dressing (to taste) and mix well.
Dressing
Try a mix of lemon juice, olive oil, ginger and fresh chilli. Or use a simple oil and vinegar dressing.
